8 Benefits of Pickles

According to Nutrition and Diet Specialist Tuba Örnek, pickles balance stomach acid and support gut health. Beneficial bacteria formed through the fermentation process boost the production of vitamin K2 and digestion-aiding enzymes.

According to Nutrition and Diet Specialist Tuba Örnek, pickles balance stomach acid and support intestinal health. Beneficial bacteria produced through fermentation increase the production of vitamin K2 and enzymes that aid digestion.

A large segment of the population avoids consuming pickles, thinking they are harmful to the stomach. Yet beyond their taste, they offer many benefits to overall health. Contradicting this belief, Tuba Örnek, Nutrition and Diet Specialist at Anadolu Health Center Hospital, states that pickles obtained by fermenting and preserving vegetables and fruits for a certain period have a protective and therapeutic role for intestinal health. The beneficial bacteria formed at the end of the fermentation process support the production of numerous vitamins, particularly K2, and digestive enzymes in the intestines. For this reason, it is a food that should not be missing from tables, except in cases of certain ailments and sensitivities.

It is possible to pickle nearly all vegetables. However, emphasizing that cabbage and beet varieties should be prioritized due to their high antioxidant content, Tuba Örnek, Nutrition and Diet Specialist at Anadolu Health Center Hospital, explains: "The important point to note here is that if an individual has conditions such as high blood pressure, kidney disease, stomach problems, heart disease, or diabetes, excessive pickle consumption should be avoided due to its high salt content. It is important for these patients to consult their doctors and include pickles in their nutrition plans. For those without any health issues, we recommend consuming approximately 2 tablespoons of pickles per day."

Simple homemade pickle recipe
Noting that homemade pickles should always be preferred over ready-made versions, Örnek states: "Using chlorine-free drinking water in pickle making, preferring naturally or organically produced vegetables, using rock salt, and following hygiene rules are very important. We should also know that adding whey or yogurt whey will increase the probiotic diversity of the pickle."
Sharing a simple cabbage pickle recipe, Örnek explains: "Wash a medium-sized cabbage, slice it, and rub it thoroughly with three tablespoons of rock salt. Pack the cabbage slices into a clean glass jar, adding sliced garlic cloves between layers. Then add one glass of whey and yogurt whey or vinegar, leaving a two-finger gap between the pickle brine and the jar lid. After sealing the jar tightly and storing it in a dark place for approximately one month, you can enjoy your pickles."

Dyt. Tuba Örnek listed 8 benefits of homemade pickles:
1. Prevents the proliferation of harmful bacteria in the intestines.
2. Balances the pH level of the intestinal environment.
3. Helps remove heavy metals such as lead, mercury, and arsenic that enter the body through nutrition, respiration, or skin contact and are harmful to human health.
4. Has the potential to neutralize carcinogenic substances.
5. Strengthens the immune system.
6. Provides protective effects against various intestinal diseases.
7. Facilitates digestion due to its high fiber content and helps prevent constipation and diarrhea.
8. Strengthens intestinal flora and helps reduce inflammation in the body.
